An aliphatic organic acid is acetic acid. It is a caustic, hygroscopic liquid with a smell similar to vinegar. Acetaldehyde can be converted to it by oxidizing it in the presence of manganese or cobalt salts. It is used to make acetic esters, cellulose acetate, and acetic anhydride. Its effects on the deterioration of old paper have been studied.

Acetic acid (AcOH) can be used as:

- A solvent system to prepare 3,4-dihydropyrimidin-2(1H)-one derivative via Biginelli reaction of aromatic aldehydes, 1,3-dicarbonyl compounds, and urea in the presence of a boric acid catalyst.
